1998: LETTUCE AND HERB SOUP (source not recorded)

No one passed the soup ID test. So, so easy

1 lettuce, shredded
6 scallions, chopped
1 Tbs. fresh mint, chopped
6 tarragon leaves, chopped
1 Tbs. parsley, chopped
1 Tbs. chopped chives
1/2 Tbs. chopped dill
5 C chicken stock
salt and pepper (to taste)

Put chicken stock in a large saucepan and bring to a boil. Add remaining ingredients, cover and simmer for 15 minutes. Puree in blender or processor. Serves 4-6
